Millet is a gluten free grain, however, we do NOT bake with it. Why? Gluten Free baking at Wild Dough Bread means we want the bread to not only be good for your gut, but good for your overall health as well. For those of you who have Hashimotos and hypothyroidism, millet is a goitrogen. You are going to great lengths to keep your thyroid healthy and millet unfortunately interferes with the thyroid.

Soaking helps, but we truly care about helping you heal from the inside out so we do not use it. We also have someone in our house who rocks an extra chromosome and we want to keep his thyroid healthy as well.
