Your gut is home to the enteric nervous system, which essentially sends signals to your digestive system and tells it when to do everything. It’s all connected by a vagus nerve so that your gut and brain are constantly communicating about the next meal and whether or not your feeling gassy, bloated, hungry etc.
Due to the amount of nerve fibers embedded in your gut lining the gut bacteria can get involved too. So, when you feel stressed, so do the bacteria. It also means that if your gut microbiome is unbalanced, your brain is feeling stressed. Dopamine, serotonin and GABA all need good bacteria to be productive and eating a diet high in gut producing microbes aka fermented foods, which produce butyric acid helps prevent inflammation and the invasion of bad bacteria.
Which brings us to Wild Dough Bread! We care about your gut-brain communication. We have chosen our GF grains carefully and it’s why we feel so strongly about fermentation. Wild Dough Bread a wonderful choice to aid in gut health!
Once upon a time, a home-educated 15-year-old girl was given the assignment to learn food chemistry through fermentation. Because she was used to eating homemade yogurt, milk kefir, lacto-fermented veggies and brewing kombucha, she decided to learn all about sourdough, but with a gluten-free twist.
Was it possible? Soon every sourdough book was checked out from the library, websites were perused, and she began to narrow in on the sourdough Greats like Poilane, Nicolas Supiot, Vanessa Kimball and others. Those who cared about the quality of flour were the ones who kept her interest, because in the end it had to meet her convictions about quality and nutrient-dense ingredients and techniques. She refused to use machines from the beginning. A bowl, her two hands and a bench scraper.
Being raised in a Nourishing Traditions House, she knew she had to stay away from certain flours and go for gluten-free grains that would give the highest nutrition and yet work well in sourdough. A starter was made and died many times before success was achieved. And then the recipe formulation, hydration, salt and bake times.
After a year, many tears and many loaves, she had a product and Wild Dough Bread was born. It has been seven years since and Wild Dough Bread continues to deliver an organic, gluten-free product that is exceptional in quality and taste.
